Garlic Sauce(Scordalia) - cooking recipe

Ingredients
    6 garlic cloves, minced
    2 c. mashed potatoes
    1/2 tsp. salt
    1 c. olive oil
    1/2 c. vinegar or lemon juice (or combine 1/4 c. each)
Preparation
    Place minced garlic, potatoes and salt in blender.
    Blend at high speed until smooth.
    Slowly add oil, alternating with vinegar (or lemon juice).
    Blend until smooth.
    If sauce is too thick, thin with several tablespoons of water.
    Serve on fried codfish, green beans, boiled beets, fried eggplant, squash, etc.
    Also use as a fresh vegetable dip.
