Sweet Potato Cakes - cooking recipe
Ingredients

5 large white potatoes, peeled and diced
6 to 8 large sweet potatoes, peeled and diced
1/2 c. bread crumbs
1 Tbsp. mayonnaise
1/4 c. skim milk
1 1/2 tsp. chives, freshly chopped or dry seasoning
1 small onion, finely diced
3/4 tsp. black pepper
1 c. shortening
6 to 8 large bananas (firm, not soft)
2 Tbsp. vegetable shortening (solid or oil)
4 apples (preferably green)
2 Tbsp. butter or bacon fat
1/2 c. brown sugar
2 Tbsp. water
3 to 4 c. cold, mashed potatoes
2 eggs, beaten
1 c. milk
1 small onion, grated fine
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 c. flour
1 c. bacon pan drippings or Crisco shortening, melted
1 tsp. baking powder
butter or margarine to taste
Preparation

Put the pan drippings (or Crisco) in a large frying pan.
Put on low heat while you prepare the potato pancakes.
