Sweet Potato Casserole - cooking recipe
Ingredients

2 sweet potatoes or yams
4 parsnips
1 medium onion
2 Tbsp. vegetable oil (optional)
1/2 tsp. basil or oregano
1 Tbsp. sesame butter (tahini)
1 Tbsp. soy sauce or Bragg's mineral sauce
1/4 to 1/2 c. water
Preparation

Preheat oven to 350\u00b0 or 375\u00b0.
Wash, brush off and cut up root vegetables and onion.
Saute onions 1 to 2 minutes.
Stir in root vegetables and cook 5 minutes; add basil or oregano and saute 2 minutes more.
Combine sesame butter, soy sauce and water in a small bowl, blending well.
Put vegetables into an oiled 2-quart oven dish and cover with sauce.
Cover and bake 35 to 40 minutes.
