Sweet-Ricotta Pie - cooking recipe

Ingredients
    2 lb. Ricotta cheese
    10 eggs
    1 1/2 c. sugar
    1 Tbsp. vanilla flavor
    juice and rind of 1 lemon
Preparation
    Beat ingredients together with a beater.
    Pour into 2 unbaked pie crusts.
    Bake at 425\u00b0 for 10 minutes.
    Reduce heat to 300\u00b0 and bake for one hour.
    Makes two 8-inch pies.
