Zucchini With Tomatoes(Zucchini Con Pomodori) - cooking recipe

Ingredients
    1/4 c. olive oil
    1 onion, sliced
    1 clove garlic, sliced
    8 oz. tomatoes
    6 medium zucchini, washed and cubed
    3 parsley sprigs
    salt and pepper to taste
Preparation
    Heat oil in medium saucepan.
    Add the onion and garlic; cook until very transparent.
    Add cut zucchini and saute for a few minutes.
    Add
    tomatoes, parsley, salt and pepper.
    Cover and cook
    on
    medium
    heat
    until lightly tender.
    Serve with Parmesan cheese, if desired.
    Makes 6 servings.
