Eggplant Patties - cooking recipe

Ingredients
    1 large eggplant
    1/2 c. water
    1 tsp. salt
    1/4 tsp. pepper
    1 c. soft bread crumbs
    dash of nutmeg
    1 tsp. dried basil
    3 Tbsp. grated cheese (dry)
    2 eggs, beaten
    1/2 c. flour
Preparation
    Cut washed, unpared eggplant in eighths and steam in water about 20 minutes or until tender.
    Drain; chop fine.
    Add remaining ingredients.
    Drop by spoonfuls on lightly greased griddle and fry on both sides until brown.
    Serve with tomato sauce, if desired.
