Salmon Ball - cooking recipe
Ingredients

1 lb. can red salmon
1 (8 oz.) pkg. cream cheese
2 Tbsp. freshly squeezed lemon juice
3 tsp. grated onion
2 tsp. horseradish
1/2 tsp. salt
dash of Worcestershire sauce
several dashes of cayenne pepper
1/4 tsp. commercial liquid smoke
1/2 c. chopped pecans
3 Tbsp. minced parsley
Preparation

Drain salmon;
remove
skin
and bones, then flake with fork. In\tsmall bowl, mix cream cheese; blend in lemon juice, onion, horseradish, salt, Worcestershire sauce, cayenne pepper and liquid smoke (this is important).\tCheck seasonings; might need more salt.
Combine
pecans
and
parsley
and spread on sheet of waxed
paper.
Turn salmon out onto this mixture and turn this way and
that\tuntil all sides are coated.
Wrap in waxed paper
and chill
thoroughly
before using.
The spread will spread nicely when chilled.
Makes 20 servings.
