Aubergine Salad(Lebanese; International; Heart Healthy) - cooking recipe

Ingredients
    2 aubergines (eggplant)
    1 small onion, finely chopped
    2 Tbsp. olive oil
    salt and pepper
    juice of 1/2 lemon
    1 tsp. vinegar
    lettuce leaves
Preparation
    Grill the aubergines so that you can skin them. Mash the pulp with all the other ingredients to make a paste. Serve on lettuce leaves, garnished with olives and slices of tomato and green pepper. It can be spread on bread or eaten with a fork. You can garnish with chopped parsley and onions.
