Home-Canned Spaghetti Sauce - cooking recipe

Ingredients
    50 to 70 lb. tomatoes
    15 large onions, cut in rings
    45 cloves garlic, minced (the stuff in jars works really well)
    3/4 to 1 c. olive oil (the good stuff)
    15 Tbsp. Italian seasoning
    4 Tbsp. salt
    5 Tbsp. sugar
    30 oz. tomato paste (to cut down on the cooking time, never claimed to be THAT domestic!)
Preparation
    Saut onion rings and minced garlic in olive oil. Add spices. Cook down while preparing tomatoes.
