Potato Soup For Hot Weather (Vichyssoise) - cooking recipe

Ingredients
    2 c. green onions or leeks, diced
    1 Tbsp. butter
    5 peeled and diced potatoes
    4 c. hot water
    salt to taste
    2 c. milk
    2 c. light cream
    1 Tbsp. butter
Preparation
    Melt butter and add green onions and cook until soft. Add potatoes, water and salt. Cover and cook slowly for 30 minutes until potatoes are done. Add milk, cream and 1 tablespoon butter. Bring to boil but stir to prevent scorching. Puree in food processor or blender. Serve cold with a dollop of sour cream for garnish.
