Jambalaya - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 Tbsp. fresh, minced garlic
    1 Tbsp. crushed chiles (like in a pizza parlor)
    4 bay leaves
    8 oz. tomato puree
    32 oz. canned crushed tomatoes in puree
    32 oz. canned diced tomatoes
    6 c. diced green peppers
    6 c. diced yellow onions
    1 qt. chicken stock or bouillon
    1 lb. andouille or other hot, smoked sausage
    salt and pepper to taste
    cooked rice
    1/2 c. diced scallions
Preparation
    Saute garlic, chili and bay leaves in olive oil; once the garlic \"opens up\" add all the tomato products and simmer stirring for about 45 minutes.
