Crustless Ricotta Pie - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach
    1/2 c. chopped onion
    2 eggs
    1 1/2 c. Ricotta cheese
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. nutmeg
    2 tsp. all-purpose flour
    1/8 tsp. paprika
Preparation
    Combine spinach and onion and microwave at High 4 to 6 minutes, stirring after half the time.
    Drain well.
    In medium mixing bowl, beat eggs with fork.
    Stir in Ricotta, salt, pepper, nutmeg and flour.
    Blend in spinach and onion.
    Spread mixture in 9-inch pie plate with rubber spatula.
    Sprinkle with paprika. Microwave on High for 4 minutes, rotating every 2 minutes.
    Reduce power to Medium and cook 3 to 11 minutes longer, until center is set.
    Let stand 5 minutes.
