Enchiladas - cooking recipe
Ingredients

8 soft flour tortillas
3/4 lb. ground beef
1 c. shredded Monterey Jack cheese
3/8 c. sliced green onion
3/8 c. dairy sour cream
1 1/2 Tbsp. snipped parsley
3/4 tsp. salt
1/8 tsp. pepper
1 1/2 cans (8 oz. each) tomato sauce
1/4 c. chopped green pepper
1 1/2 Tbsp. chopped green chilies
1/2 Tbsp. chili powder
1/8 tsp. ground cumin
1/4 c. sliced pitted ripe olives
Preparation

Brown and drain ground beef.
Remove from heat.
Stir in 3/4 cup of the cheese, the green onion, sour cream, parsley, salt and pepper.
Cover and reserve.
Heat remaining ingredients except olives to boiling; reduce heat.
Simmer uncovered 5 minutes. Spoon about 1/4 cup beef mixture onto each tortilla; roll tortilla around filling.
Arrange in ungreased oblong baking dish.
Pour sauce over enchiladas.
Sprinkle with remaining cheese.
Cook uncovered in 350\u00b0 oven until bubbly.
Garnish with olives.
