Oven-Fried Catfish(Tenn. River) - cooking recipe
Ingredients

1 lb. catfish fillets (or substitute other fish)
2 Tbsp. skim milk
1/2 c. cornmeal
1/2 to 1 tsp. oil
1 Tbsp. butter or oleo
1 egg
1/4 tsp. salt
1/4 tsp. paprika
1/4 tsp. onion powder
Preparation

Beat milk and egg in one bowl, combine cornmeal and seasonings in another shallow bowl.
Dip each fillet into egg and then into cornmeal, coating thoroughly.
Place in single layer in baking dish coated with oil.
Dot fillets with oleo.
Bake at 500\u00b0 about 12 minutes, or until flaky.
Serves 4.
