Quick Fried Spinach And Rice - cooking recipe

Ingredients
    1 c. cooked rice
    1 1/2 Tbsp. vegetable oil
    1/4 onion, cut into thin rings
    1 clove garlic, chopped
    6 c. fresh spinach
    1/2 tsp. salt
    1/8 tsp. pepper
    1/8 tsp. ground nutmeg
Preparation
    Prepare rice according to package directions.
    Set aside.
    In a large frying pan or wok, cook onion in vegetable oil for a few minutes until translucent.
    Add garlic and stir, cooking for 1 minute.
    Add spinach and toss until spinach wilts.
    Add rice, salt, pepper and nutmeg to spinach mixture; toss together until mixed well and heated through.
    Remove from pan and serve. Serves 4.
