Ingredients

1 c. white sugar
1 Tbsp. butter
2 Tbsp. flour
pinch of salt
grated rind and juice of 1 lemon
1 c. milk
2 eggs
Preparation

Cream sugar and butter.
Add flour, salt, rind, juice, yolk of eggs (well beaten) and milk.
Fold in stiffly beaten egg whites. Pour in pudding dish.
Bake in slow oven until brown (about 350\u00b0).
