Tabbuli Salad - cooking recipe

Ingredients
    1 c. cracked wheat
    1 bunch green onions
    2 large bunches parsley
    1/2 bunch mint
    4 large tomatoes
    1/2 c. olive or vegetable oil
    salt and pepper to taste
    juice of 4 lemons
Preparation
    Soak wheat in cold water for at least 1/2 hour. Squeeze dry by pressing between palms of hands.
    Chop onions, parsley, mint leaves and tomatoes very fine.
    Add wheat, lemon juice, oil, salt and pepper. Mix well. Serve with fresh lettuce leaves, grape leaves or steamed cabbage leaves.
    The leaves are to be used like scoops. Serves 6.
