Ingredients

1/2 c. cider vinegar
1/2 c. water
1/4 c. sugar
1/8 tsp. freshly ground black pepper
1/8 tsp. salt
1 can whole small beets
Preparation

Combine ingredients, bring to a boil; cool slightly.
Place beets in a deep bowl and pour dressing over beets.
Let stand for several hours in refrigerator or overnight.
Serves 2 to 4.
