Zucchini "Apple" Pie - cooking recipe
Ingredients

pastry for 2 crust pie
5 c. sliced zucchini, cooked until tender-crisp
2 Tbsp. lemon juice
1/2 tsp. salt (if desired)
1 1/4 c. sugar
1 1/2 tsp. cinnamon
1 1/2 tsp. cream of tartar
dash of nutmeg
3 Tbsp. flour
Preparation

Make pastry.
Use big zucchini, but still tender enough that you can pierce skin with fingernail.
Peel, cut in quarters, remove seeds and cut into apple slice sizes.
Toss together the zucchini, lemon juice and salt.
Mix remaining ingredients in a large bowl.
Add zucchini mixture to bowl and mix well.
(It will be runny.)
Dump the filling into a 9-inch unbaked crust.
Dot with butter or margarine.
Add top crust.
Bake at 400\u00b0 for 40 minutes or until golden brown.
You won't believe how delicious this pie is!
Serves 8.
