Congri - cooking recipe

Ingredients
    1 lb. dried black beans
    3 Tbsp. red wine vinegar
    4 qt. brown veal and pork stock or canned beef broth
    2 medium green peppers, chopped
    2 tsp. ground cumin
    2 tsp. whole cumin seed
    1 tsp. freshly ground black pepper
    1/2 tsp. red cayenne pepper
    salt to taste
    1/4 c. bacon drippings
    8 bacon slices, finely chopped
    1/2 lb. tasso, finely chopped
    1 large onion, chopped
    4 large garlic cloves, minced
    2 c. long grain white rice
    1 c. brown veal and pork stock or canned beef broth
    1 1/2 lb. chorizo sausage
    6 green onions, chopped
Preparation
    Sort through beans; discard any discolored ones.
    Soak beans overnight in water to cover.
    Drain beans.
