Lentil, Garbanzo Bean And Tomato Salad(Low-Fat) - cooking recipe

Ingredients
    3 c. water
    1 c. lentils
    2 large carrots, peeled and thinly sliced
    1 bay leaf
    1 (15 oz.) can garbanzo beans, rinsed and drained
    1/2 basket cherry tomatoes, halved or regular tomatoes, chopped
    1 c. chopped fresh parsley
    5 green onions, chopped
    1/4 c. olive oil
    2 \"heaping\" Tbsp. lemon juice
Preparation
    Cook lentils, carrots and bay leaf in water for 30 minutes. Drain and transfer to large bowl to cool.
    Mix all remaining ingredients into lentils.
    Season to taste.
    Can be prepared up to four hours ahead.
    Tastes better with some time to meld the flavors.
