Southern Rice Cakes - cooking recipe

Ingredients
    3 Tbsp. butter
    1/4 c. chopped onion
    1/4 c. chopped green pepper
    1/4 c. chopped red pepper
    1 Tbsp. thyme
    2 c. cooked rice
    1 egg
    3 Tbsp. all-purpose flour
    3 Tbsp. cornstarch
    3 Tbsp. cream
    pinch of cayenne pepper
    salt and pepper
    clarified butter or margarine
Preparation
    Heat butter in medium skillet.
    Add onion, green pepper, red pepper and thyme.
    Saute lightly.
    Remove from heat.
    Pour into mixing bowl.
    Add rice and egg.
    Stir in flour and cornstarch. Add cream and cayenne.
    Season with salt and pepper.
    Add more cream, if necessary, to make a smooth batter.
    Heat clarified butter in skillet.
    Add scoops of rice cake mixture.
    Press down with spatula.
    Cook until browned on both sides.
