Blueberry Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. oil (olive okay)
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla
3 c. sifted flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. baking powder
dash of nutmeg
1/2 c. chopped nuts
1 c. blueberries
Preparation

Beat eggs until light and foamy. Add oil, sugar, grated zucchini and vanilla.
Mix lightly but well. Add flour, salt, soda, spices and baking powder (all sifted). Blend well. Add nuts and berries. Use 2 (9 x 5 x 2) loaf pans. Bake at 325\u00b0 for 1 hour. Makes 2 breads. Very delicious!
