Scampi Salad Platter - cooking recipe

Ingredients
    4 c. torn fresh spinach leaves
    1 (15 oz.) can garbanzo beans, drained
    1 (8 oz.) can sliced water chestnuts, drained, or 1 small jicama, peeled and cubed
    1 c. sliced fresh mushrooms
    1/3 c. sliced green onion
    1/4 c. Italian salad dressing
    1 clove garlic, minced
    1 Tbsp. olive oil or cooking oil
    1 c. dry white wine
    1 lb. fresh or frozen, peeled, deveined shrimp
    4 hard-cooked eggs, quartered
    4 (1 oz.) slices Cheddar cheese, cut into triangles
    2 medium tomatoes, cut into wedges
    2 Tbsp. Italian salad dressing
Preparation
    In a large mixing bowl, combine the spinach, garbanzo beans, water chestnuts or jicama, mushrooms and green onion.
    Add the 1/4 cup Italian dressing; toss to mix.
    Cover and chill.
