Cheddar Soup - cooking recipe

Ingredients
    1 c. minced carrots
    1 c. diced celery
    1 c. diced onion
    1 c. green pepper, diced
    1/2 c. margarine
    dry sherry
    1/2 c. flour
    2 qt. chicken broth
    6 c. shredded Cheddar cheese
    4 c. evaporated milk
    1/2 tsp. salt
    white pepper
Preparation
    Saute carrots, celery, onion and pepper for about 5 minutes in butter.
    Stir in flour until pasty.
    Add chicken broth while stirring constantly.
    Add cheese slowly until melted.
    Add evaporated milk, salt and pepper.
    If you want a smooth creamy soup, puree first 4 ingredients before mixing with flour, etc. Add 1/8 cup sherry just before serving.
