Baked Zucchini And Rice - cooking recipe

Ingredients
    2 c. thinly sliced, unpeeled raw zucchini
    1/2 c. quick brown rice
    1/4 c. each cut onion and parsley
    1 clove garlic, sliced thin
    1/2 tsp. salt
    3/4 c. boiling water
    3 eggs, beaten
    1/2 c. milk
    1 c. grated sharp cheese
Preparation
    Combine zucchini, rice, onion, garlic, salt and parsley in pan.
    Add water, lower heat and cook 15 minutes.
    Add eggs, cheese and
    milk.
    Bake
    at
    350\u00b0 for 40 minutes or until set. Serves 6.
