Parsley Potato Salad - cooking recipe
Ingredients

2 c. cooked, diced potatoes
1/2 Tbsp. chopped pimento
1/2 c. diced celery
1 Tbsp. chopped onion
2 Tbsp. chopped fresh parsley
1/2 Tbsp. cider vinegar
1 tsp. dry mustard
1/2 tsp. celery seed
fresh ground pepper
1/4 c. mayonnaise
Preparation

In a large bowl, combine all ingredients, except mayonnaise. Toss lightly.
Cover and refrigerate several hours.
A few hours before serving, add mayonnaise and stir to mix well.
Cover and keep salad chilled until served.
