Billi Bi(A Creamy French Mussel Soup) - cooking recipe

Ingredients
    3 1/2 lb. mussels
    6 shallots, minced
    2 1/2 c. white wine
    1 bay leaf
    pinch of cayenne
    salt and freshly ground pepper
    6 medium onions, chopped
    2 Tbsp. chopped parsley
    4 Tbsp. butter
    1 tsp. thyme
    4 c. cream
    2 egg yolks, beaten
Preparation
    Clean and debeard the mussels.
    Place all the ingredients except cream and egg yolks in a large soup pot.
    Cover tightly and bring to a boil.
    Lower the heat and simmer for 8 minutes or until the mussels have opened.
    Remove the mussels and shell them; reserve in a bowl.
    Strain the broth and return to the pot.
    Add the cream and bring to a boil again.
