Breast Of Chicken In Wine(Serves 4) - cooking recipe

Ingredients
    1 double breast of a 2 lb. chicken (per person)
    flour
    salt and pepper
    1/2 c. butter
    1/2 lb. mushrooms, sliced
    1 c. cream
    1/4 c. white wine
Preparation
    Remove skin and bones from chicken breasts.
    Place between wax paper and pound out chicken breasts until approximately 3/8-inch thick.
    Salt and pepper breasts and roll in flour.
    Heat in skillet 1/2 cup butter.
    Cook breasts in hot butter over low heat until lightly browned on both sides.
    Add mushrooms; cover and cook 10 minutes.
    Drain off excess butter.
    Add cup of cream and simmer over low heat 10 minutes.
    Transfer breasts to warm platter.
    Add the wine to liquid in skillet; bring to a rapid boil and cook until sauce is reduced to creamy consistency.
    Spoon sauce over the chicken breasts and serve while hot.
