Butter Beans In Savory Sauce - cooking recipe

Ingredients
    4 c. lima beans
    2 c. water
    2 tsp. salt, divided
    1/4 c. butter or margarine
    1/4 c. flour (all-purpose)
    1/4 tsp. black pepper
    4 tsp. prepared mustard
    1 c. milk
    4 tsp. fresh lemon juice
    1/4 c. diced pimiento
Preparation
    Combine beans, water and 1 teaspoon salt.
    Bring to boil and cook until tender.
    Drain, reserving the liquid.
    Add enough water to the liquid to measure 1 cup; set aside.
    Melt butter in saucepan.
    Blend in flour, 1 teaspoon salt and pepper.
    Stir in mustard, bean liquid and milk.
    Cook until thickened, stirring constantly.
    Add lemon juice and pimiento.
    Pour sauce over beans. Yield: 8 to 10 servings.
