Ingredients

1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 c. sugar
1 c. oil
2 eggs
1 c. finely grated carrots
1/2 c. new Dole chopped almonds
1/2 c. raisins
7 oz. Baker's Angel Flake coconut
1 (16 oz.) can cream cheese frosting
Preparation

Mix flour, baking powder, salt and cinnamon.
Beat sugar and oil at medium speed with mixer until mixed well.
Stir in flour mixture.
Add eggs, one at a time, beating well after each egg. Stir in carrots, nuts, raisins and 2/3 cup of coconut.
Pour in greased and floured 9-inch Bundt pan.
Bake at 350\u00b0 for 35 minutes or until cake tester comes out clean.
Cool.
