Golden Potato Medley - cooking recipe

Ingredients
    3 medium potatoes, pared
    3 medium carrots, pared
    1/4 c. butter or oleo
    1 medium onion, chopped
    1/4 c. green pepper, chopped
    3 Tbsp. flour
    2 c. milk
    3 Tbsp. chopped pimientos
    1/2 c. shredded sharp Cheddar cheese
    2 Tbsp. fine bread crumbs
    1 Tbsp. melted butter
Preparation
    Cut potatoes in cubes, slice carrots, cover with boiling water, simmer until vegetables are tender; drain.
    Melt butter in pan. Add onions and green pepper.
    Saute until onion is tender; blend in flour and add milk.
    Cook until all blended in.
    Remove from heat, add pimientos and season with salt and pepper.
    Stir in cheese until blended
