Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    5 c. ground green pepper
    4 c. ground onion
    3 c. ground celery
    1 c. ground red pepper
    4 Tbsp. salt
    4 1/2 c. sugar
    2 1/2 c. vinegar
    1 tsp. turmeric
    1 Tbsp. dry mustard
    1/2 tsp. pepper
Preparation
    Put the first 5 ingredients in a kettle and sprinkle with 4 tablespoons salt; let stand overnight. Drain and add the remaining ingredients. Bring to a boil. Cook 1 minute.
    Put in jars and seal.
