Potato Puffs - cooking recipe
Ingredients

2 c. mashed potatoes
2 eggs
1 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
oil (for deep frying)
Preparation

In mixing bowl, beat eggs. Add potatoes.
Combine flour, baking powder and salt. Stir into
potato mixture. In a large saucepan or kettle, heat about 1-inch oil. Drop mixture by heaping teaspoonfuls, 4 or 5 at a time, in hot oil.
Fry 2 to 3 minutes, turning once, until golden brown.
Drain on paper towels.
Yields about 1 1/2 to 2 dozen.
