Piccalilli - cooking recipe

Ingredients
    2 pecks green tomatoes
    2 lb. red sweet peppers
    7 to 8 lb. green peppers
    6 to 8 lb. onions
    5 lb. sugar
    3 qt. vinegar
    1 pack mixed pickling spice, tied in bag
Preparation
    Grind onions, peppers and tomatoes.
    Sprinkle top with salt. Let rest overnight.
    Drain in A.M.
    Add sugar, vinegar and spice bag.
    Cook slowly until all vegetables are done.
    When done, put in hot jars and seal.
    Makes approximately 14 quarts.
