Elegant Potato Casserole - cooking recipe
Ingredients

6 potatoes, boiled and cooled
1/4 c. plus 3 Tbsp. butter
1 can cream of chicken soup
2 c. sour cream
1/3 c. green onions, chopped (include tops)
1 1/2 c. cheddar cheese, grated
salt and pepper to taste
Preparation

Grate or slice cooled potatoes. Melt 1/4 c. of the butter in the soup. Cool and blend in sour cream. Add potatoes, green onions and 1 c. of the grated cheese to the mixture, adding salt and pepper to taste. Put into casserole dish(es). Dot with remaining butter and cover with remaining cheese. Bake at 350\u00b0 for 45 minutes. Makes two nice casseroles and can be prepared and frozen and then baked when ready to serve.
