Potato Candy - cooking recipe

Ingredients
    1 medium potato, boiled
    1 1/2 to 2 c. confectioners sugar
    1/4 tsp. salt
    1 c. peanut butter
Preparation
    Boil potato in salt.
    Drain.
    Mash potato.
    Add confectioners sugar, a small amount at a time.
    Place mixture on wax paper and roll out.
    Spread peanut butter on top and sprinkle with confectioners sugar.
    Roll up and cut into 1-inch rolls.
    Slice.
