Corn Pones - cooking recipe

Ingredients
    1 c. cornmeal
    1/2 tsp. salt
    3/4 c. boiling water
    olive oil for cooking on griddle
Preparation
    Combine the cornmeal and salt in a bowl.
    Pour in the boiling water and beat until the mixture is smooth.
    Shape the mixture into round balls and flatten into cakes about 1/2 inch thick. Lightly cover hot griddle with oil and cook corn pones until golden on each side.
