Parmesan Crusted Perch - cooking recipe
Ingredients

2 Tbsp. grated Parmesan cheese, divided
1/3 c. plain low-fat yogurt
2 Tbsp. prepared horseradish
2 Tbsp. Dijon mustard
2 Tbsp. lemon juice
1 tsp. margarine, melted
8 (4 oz.) perch fillets
vegetable cooking spray
Preparation

Combine 1 tablespoon cheese, low-fat yogurt, horseradish, mustard, lemon juice and margarine.
Spread evenly on one side of fillets.
Place fillets, coated side up, on a rack coated with cooking spray.
Place rack in broiler pan.
Sprinkle with remaining cheese.
Broil 6-inches from heat (with electric oven door partially opened) 18 minutes or until golden and fish flakes easily when tested with a fork.
Yields 8 servings (127 calories, 2.4 g fat).
