Ingredients

1 c. cider vinegar
3 eggs
1/4 c. all-purpose flour
1 Tbsp. dry mustard
1 tsp. salt (optional)
1/4 tsp. freshly ground black pepper
2 Tbsp. margarine
artificial sweetener equal to 1/2 c. sugar (optional)
Preparation

In a heavy saucepan, whisk together the vinegar, eggs, flour, mustard, salt, pepper and 2 cups water.
Cook over medium heat, stirring constantly, until smooth and thickened, about 6 minutes. Remove from heat.
Stir in margarine and artificial sweetener. Pour into clean jars.
Cover; refrigerate up to 3 months.
