Chicken With Cashews And Snow Peas - cooking recipe

Ingredients
    1 whole chicken breast, split, skinned, boned and cut in 1-inch cubes
    2 cloves garlic, peeled and minced
    1 Tbsp. soy sauce
    1 Tbsp. dry sherry (optional)
    2 Tbsp. cornstarch
    1 tsp. hoisin sauce (optional)
    1 Tbsp. peanut oil
    20 snow peas, ends and strings removed
    1/2 c. sliced water chestnuts, drained
    1/2 c. hot chicken stock
    1/2 tsp. salt
    1/2 c. unsalted raw cashews
Preparation
    Marinate chicken 15 minutes in mixture of next 5 ingredients. Heat oil in uncovered wok at 375\u00b0.
    Add chicken mixture; stir-fry 3 minutes.
    Add snow peas and water chestnuts; stir-fry 30 seconds.
    Add stock and salt; stir-fry until slightly thickened. Stir in cashews; stir immediately.
