Ingredients

2 tsp. vegetable oil
1/4 c. thinly sliced onion
2 tsp. imitation bacon bits
2 Tbsp. cider vinegar
1 tsp. granulated sugar
dash each: salt and pepper
6 oz. peeled, cooked potatoes, thinly sliced
Preparation

In small skillet, heat oil over medium heat; add onion slices and bacon bits and saute until onion is translucent.
Add vinegar, sugar, salt and pepper and cook, stirring occasionally, until mixture starts to boil.
Add potatoes and cook, stirring gently, until thoroughly heated.
Serve hot.
Makes 2 servings.
