Coconut Cream Pie - cooking recipe

Ingredients
    9-inch baked pie shell
    1 c. sugar
    1/2 c. flour
    1/4 tsp. salt
    2 c. milk, scalded
    3 egg yolks
    2 Tbsp. butter
    1/2 tsp. vanilla
    1/2 c. flaked coconut
    whipped cream (optional)
Preparation
    Mix sugar, flour and salt together.
    Add the milk gradually to the dry ingredients.
    Cook in a double boiler, stirring almost constantly, about 10 minutes, until the mixture thickens. Gradually add the slightly beaten egg yolks and cook another 3 minutes, stirring constantly.
    Add butter and vanilla.
    Fold in the coconut.
    Cool, without stirring, for about 10 minutes.
    Pour into the pie shell.
    Chill until firm.
    Serve with whipped cream, if you wish.
