Escalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant, peeled and sliced
    1 large or 2 small tomatoes, sliced
    1 large onion, thinly sliced
    3/4 c. margarine, melted
    1/2 tsp. salt
    1 c. sharp cheese, grated
    1/2 c. cracker crumbs
    2 tsp. Parmesan cheese
Preparation
    In a Pyrex dish, arrange eggplant, onion and tomato slices in layers. Dribble half of the melted margarine over these slices. Sprinkle salt over slices. Cover and bake 20 minutes in a 450\u00b0 oven. Remove from oven. Sprinkle cheese over dish; pour remaining margarine onto it and sprinkle with cracker crumbs and Parmesan cheese.
    Return to oven, uncovered, and bake 10 minutes longer.
