Carrot-Coconut Bread - cooking recipe

Ingredients
    2 1/2 c. flour
    1 c. sugar
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    1/2 tsp. salt
    3 beaten eggs
    1/2 c. cooking oil
    1/2 c. milk
    2 c. shredded carrots
    1 1/3 c. coconut
    1/2 to 1 c. chopped nuts
Preparation
    Preheat oven to 350\u00b0.
    In large bowl, sift together first 6 ingredients.
    Combine separately and add the next 3 ingredients. Stir just until dry ingredients are moistened.
    Stir in last 3 ingredients.
    Turn into 4 well-greased and floured 16 ounce fruit or vegetable cans or 2 (9-inch) bread pans.
    Bake 45 to 50 minutes.
    Remove from cans and cool thoroughly.
    Wrap and refrigerate overnight or until used.
