Ingredients

3 c. Colorado Basic cookie mix
1 egg
1/2 tsp. almond extract or 3/4 tsp. vanilla
sugar
Preparation

Blend all ingredients thoroughly.
Roll dough 1/8 to 1/4-inch thick.
Cut with a round cookie cutter the size you like or have. (Chill the dough 2 to 3 hours, or overnight before rolling if it is difficult to handle.)
Place 1 to 2 inches apart on ungreased baking sheet.
Bake at 375\u00b0 for 8 to 10 minutes.
Place cookies on racks to cool.
Sprinkle with sugar or as desired.
