Sweet And Sour Chicken Salad - cooking recipe

Ingredients
    5 oz. diced, cooked chicken (1/4-inch pieces)
    1/2 c. diced celery
    1 medium apricot, pitted and diced or 2 dried apricot halves
    2 Tbsp. each: minced green onions and sour cream
    1 Tbsp. and 1 tsp. reduced-calorie mayonnaise
    1 Tbsp. apple cider vinegar
    2 tsp. apricot preserves
    1/8 tsp. salt
Preparation
    In serving bowl, combine chicken, celery, apricot and scallions.
    In small bowl, combine remaining ingredients; pour over chicken and stir.
    Makes 2 servings.
