Caribbean Ratatouille - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 medium-size onions, coarsely chopped
    1 clove garlic, minced
    1/4 lb. okra, cut into rounds
    1 large unpeeled eggplant, cubed
    1 c. mushroom pieces (large)
    1 chopped green bell pepper
    1 chopped red bell pepper
    3 large ripe tomatoes, peeled and chopped
    1/2 tsp. oregano
    1/2 tsp. thyme
    ground black pepper
Preparation
    In large saucepan, heat oil.
    Saute onions and garlic until soft (about 5 minutes).
    Stir in remaining ingredients.
    Reduce heat to low, cover saucepan and simmer, stirring occasionally until vegetables are tender (about 30 minutes).
    Add additional seasonings to taste.
    Serves 6 to 8.
