Seafood Newburg - cooking recipe

Ingredients
    6 Tbsp. butter or margarine
    2 Tbsp. flour
    1/8 tsp. nutmeg
    dash of paprika
    1 tsp. salt
    3 Tbsp. sherry
    3 c. cooked shrimp, lobster, crab or scallops
    2 c. light cream
    3 egg yolks, slightly beaten
    bread crumbs (if desired)
Preparation
    Melt butter; stir in flour, nutmeg, paprika and salt until smooth.
    Stir in sherry, then seafood; cook until heated through. Combine cream and egg yolks and slowly pour into mixture; stir constantly, continuing until thick and smooth.
    Serve with toast points.
    Top with bread crumbs and bake until brown, if desired.
