Island Rice - cooking recipe

Ingredients
    2 Tbsp. butter
    1 c. rice (not instant)
    2 1/2 c. boiling water
    1/3 c. butter
    1/4 c. finely chopped onion
    1/2 c. sliced fresh mushrooms
    1 pkg. frozen peas, thawed
    1 can water chestnuts, diced
    3 Tbsp. soy sauce
Preparation
    In skillet melt 2
    tablespoons\tbutter.
    Add rice; cook until light brown.
    Turn into
    1 1/2 quart casserole.
    Pour in water and stir with fork.
    Cover
    with
    foil\tand bake at 350\u00b0 for 30 minutes.
